The beautiful southern region of Thailand is well known for its mountains, forests and sea. CENTRAL THAILAND

The central region to Thailand is perhaps the most well known. It is here where you will find Bangkok, the capital city as well as traditional Thai cuisine. Central Thailand is characterized by plains and fresh waterways. This region is abundant in underwater vegetation, fresh water shrimp and fish. Locals of this region enjoy using herbs and spices to enhance the flavor and aroma of their food to suit individual tastes. NORTHERN THAILAND

This rural region is home to Thailand’s hill tribes. Chiang Mai is the most well known city. Northern Thailand is characterized by high mountains and deep valleys. The climate is cool and ideal for growing vegetables such as tomatoes and cabbage. Once primitive, locals of this region still lead simple and relaxed life styles; which are reflected in their diet. Locals here are not as discriminating as Bangkokians in regard to food preparation. Mild spices are used and a delicate, well blended taste is preferred.

NORTHEASTERN THAILAND

This region is characterized by plateaus surrounded by mountains. The summers are hot and humid; the winters are cold and dry. The cuisine or the northeastern region is to Thailand what southern Cajun is to American cuisine. The northeast is home to what we call Esan Thai food.
